Hannah Simon

The Triple Crowner from Bedford, Texas, making waves in the bikepacking world. She holds a degree in Environmental Science with a minor in Visual Media from the University of Texas at Austin and currently works as a Production Assistant at Chumba Bikes.

Her bikepacking journey began with the East Texas Showdown in 2021 and quickly escalated to major events like the Tour Divide, where she tied for 3rd place. She discovered Tater Boost during the Atlas Mountain Race in Morocco, thanks to fellow ambassador Mateo Paez.

In 2024, Hannah won the women’s category of the Silk Road Mountain Race in Kyrgyzstan, finishing the 1,939 km course in 8 days, 20 hours, and 16 minutes—earning 9th place overall. The result was a standout achievement in a demanding race.

For 2025, she’s set to race the Hellenic Mountain Race in Greece this May and Bright Midnight in July, spending much of the summer riding through Europe. As she puts it, “Season's just starting to ramp up. Looking forward to it!”

Hannah’s grit, creativity, and love for the long haul make her a standout Trail Tater.

Mateo Paez

He is a friend, and an ultra-endurance cyclist based in Bend, Oregon, known for his relentless pursuit of adventure and competitive spirit. Growing up in a California beach town, he developed a passion for exploration through activities like skateboarding, surfing, and mountain biking. A college Vespa accident led him to bicycle commuting, eventually immersing himself in Portland's local race scene, including criteriums, cyclocross, and cross-country mountain biking.

As a dedicated Trail Tater and Tater Taster, Mateo contributed invaluable feedback during Tater Boost's development, famously suggesting to "make Tater Boost saltier." In 2024, he completed the Tour Divide in 17 days, 22 hours, and 17 minutes, and he's set to tackle it again in June 2025. His 2025 race calendar also included the Trans Ecuador Mountain Bike Route in January, to help prepare for the big one this June.

Mateo documents his adventures and gear setups on his website, ultrapaez.com, and shares updates on Instagram @whatswrongwithpaez.

Ramon Martinez

Ramon lives in Independence, Oregon, historically has gravitated towards the longer distances, being particularly drawn to the meditative-like pluses of going after big miles. Prior to moving to Oregon, Ramon competed for the cross country running team at Viterbo University. His first Oregon home was in Corvallis, where he started competing in longer-distance running events. He got the longer-distance running bug quickly, completing various ultras and eventually five editions of the Boston Marathon. Cycling naturally started in the college town and multisport followed. He stuck to the duathlon discipline because it combined his two favorite activities of running and cycling. He kept at it in the 2018/2019 seasons and earned a spot to compete on Team USA at the 2019 Duathlon World Championships in Zofingen, Switzerland.

Bikepacking events are still relatively new to him, and he continues to enjoy learning how to efficiently complete the longer rides. He has completed two Odyssey of the VOGs in 2023 and 2024. Later this year, he will attempt The Big Lonely in Bend.

Ramon enjoys being part of the cycling community. He is currently part of the Mudslinger Adventure Squad and coordinates the Bike Indy Oregon program. He is one of our crucial Tater Tasters and we value his taste buds as we develop our formulas.

Benjamin Handrich

Ben is a passionate bikepacker and high school counselor from Oregon, known in the endurance community for his adventurous spirit, humility, and tireless drive. A close friend of the Tater Taster crew, Ben has played a key role in shaping Tater Boost through early product feedback and trail-tested support.

He’s no stranger to big efforts, having tackled routes like the Colorado Trail and setting the FKT on the Oregon Timber Trail. His ultra-endurance journey began with the BC Epic 650 in 2019, sparking a deep love for multi-day bikepacking adventures. On foot, he’s just as quick—securing wins at several local half and full marathons, including the scenic and technical Silver Falls Trail Marathon.

In 2021, Ben co-founded the Odyssey of the VOG, a rugged 350-mile bikepacking race winding through Oregon’s Coast Range—an event that’s become a favorite in the Northwest.

Ben kicked off 2025 by racing the Houston Marathon and has since been ramping up his cycling miles with a mix of solo missions and tandem adventures alongside his powerhouse partner, Trish. Together, they’ve been putting in the work to prepare Ben for his biggest ride yet: the 2025 Tour Divide.

Madalyn Nones

Madalyn moved to Oregon last August to start a PhD in Public Health at Oregon State University. She feels most at home on the trails and with her trail running community and is down to run any distance between the 25k and 100 miles. She’s a Pinhoti 100 & Cruel Jewel 100 finisher. When not wearing a race bib, Maddy still spends time volunteering at aid stations or helping to maintain the local trails.  She aspires to run in as many places and on as many different types of terrain as possible. As of right now, her dream race is the 100-mile distance at Ultra Trail Cape Town.

Shannon Mangan

She is a Florida native who moved to Seattle to chase her biking dreams, and never looked back. After working in construction management, she found her true calling during the pandemic through bikes. From wrenching in local bike shops to now leading communications and social media for Cascade Bicycle Club, Shannon’s passion for cycling and community runs deep.

She got into bikepacking as a budget-friendly way to explore the outdoors, turning weekend camping trips into multi-day solo adventures. In 2025, she's tackling her biggest challenge yet: the 1,050-mile Transatlantic Way race in Ireland. She’s also aiming to beat her personal record on a cross-Washington trip—one of her proudest accomplishments.

Shannon fuels her rides with Tater Boost. Portable potatoes that taste great and weigh less than the real thing? That’s a no-brainer.
